One of my favorite things about this story is how it started. Sam Khader, founder of Dimassi’s Mediterranean Buffet, walked into a restaurant in Houston, saw a Square Register, and called us. After experiencing Square firsthand, he believed it would make his business better. That was in 2018. Today, Dimassi’s operates 24 locations on Square across Texas and California, is expanding again this year, and is deepening its use of our platform. We were proud to support the Hospitality Innovation Lab, a first-of-its-kind project connecting hospitality operators with technology suppliers to test solutions in real working environments. The results speak for themselves: • 5 of 6 suppliers secured agreements, extensions or advanced commercial negotiations • Trials identified seven-figure revenue opportunities across some businesses • One operator signed an agreement to replace its existing training provider The selected suppliers, ADECI Group Cosysense 1Huddle Tenzo, Promote.io and Peckish, began their trial phase on 30 March 2026, exhibiting together in a dedicated feature area at Hospitality Tech360 2026.
