Iceland - Any places which are must-see?

Haven't posted much in a while - have mostly turned lurker and catching up on reading bookmarked fics when time permits. RL has been relentless and am desperately in need of a change of scenery to recharge batteries.
A couple of friends and I are thinking of travelling to Iceland for a 2-3 week holiday towards the end of the year. We are now starting our research on places of interest to visit and which are the best places to stay and to see and which are the local delicacies we must try, etc. etc. But as we are on a modest budget, I would like to seek advice from my flist who could perhaps help us out with local knowledge of Iceland?
I have seen some absolutely beautiful shots of breathtaking scenery and am awestruck by the majesty of it all. Can hardly wait to experience it all in person :)
Would greatly appreciate any and all recommendations in our quest to see and experience as much of local Iceland as we are able during our short travels there.
